this sounds delicious! I wonder if they would work in different shapes like stars or christmas trees or gingerbread men?
Buy the tiny cookie cutters and make the opening star-shaped or whatever. The cookie top and bottom would be round. The filling goes in the middle and you seal the edges with a fork. Or try this, but you might need to seal the edges:
