I have the same problem, but I think it's a combination of cooking too long and rolling the dough too thin!

You won't believe it, but the prefab Pillsbury ones in the dairy case are actually really good.I first tried them about 12 years ago because the daughter of a friend made them. She was just a young girl in grade school, so I wasn't expecting much, but I took a cookie to be polite. I still remember my reaction. I said "You made these yourself?" Can I have another one? These are really good!". She was so proud. I was shocked when she told me they were the Pillsbury ones. She's gone on to become quite the baker and cake decorator, so I like to think my early praise had something to do with it.
Anyway I'm getting of track. The Pillsbury dough in a tube makes very good gingerbread cookies, and if you're busy making a lot of from scratch cookies, these would be a welcome cheat.![]()
