for the perfect gingerbread cookie?

Everytime i make mine they always come out too tough, even when i cook them a little under the suggested time!

I have the same problem, but I think it's a combination of cooking too long and rolling the dough too thin!

You won't believe it, but the prefab Pillsbury ones in the dairy case are actually really good. I first tried them about 12 years ago because the daughter of a friend made them. She was just a young girl in grade school, so I wasn't expecting much, but I took a cookie to be polite. I still remember my reaction. I said "You made these yourself?" Can I have another one? These are really good!". She was so proud. I was shocked when she told me they were the Pillsbury ones. She's gone on to become quite the baker and cake decorator, so I like to think my early praise had something to do with it.

Anyway I'm getting of track. The Pillsbury dough in a tube makes very good gingerbread cookies, and if you're busy making a lot of from scratch cookies, these would be a welcome cheat.
